Something Warm, Something Ready: Creamy Pumpkin Soup

I want to have something warm to eat when I get home.

That’s a pretty simple thing, but when I’m busy, it can be the difference between sitting down for a meal and standing in the kitchen trying to figure out what sounds good while I’m already hungry.

I’ve been thinking about food a lot as I get ready to start marathon training. I want to feel more consistent with eating, and I want to give myself enough food for everything I’m asking my body to do. Running, working, training clients, getting through a full day. All of that needs some attention outside the workout itself.

I also want to enjoy what I’m eating. Especially this time of year, when I want to bake things and make something that smells good and feels like fall.

So a creamy pumpkin soup feels like a good place to start.

There’s something I like about making a pot of soup. You do a little chopping, let it cook, and end up with something you can come back to. It gives you a meal today and makes another meal easier later in the week.

That’s useful to me. I don’t always need more options. Sometimes I just need to know there’s something there.

With a soup like this, I also think about what I’m having alongside it. Pumpkin and broth alone might not be enough for the meal I need. Greek yogurt adds some protein and creaminess. Bread gives me something to dip and helps make the meal more substantial. Depending on how hungry I am, I could add a sandwich or have it alongside another part of dinner.

Those are the kinds of choices I want to get more comfortable making. Looking at what’s on my plate and asking whether it’s enough to support my day.

Nutrition can start to feel complicated when every ingredient needs an explanation and every meal needs to do everything. But eating regularly, including a variety of foods, and giving yourself enough to eat are already things worth paying attention to.

Cooking can help with that. So can a shortcut. Canned pumpkin, store-bought broth, bread I didn’t bake myself. I want the meal to be something I’ll actually make again when I’m busy.

I’m still working on giving food that kind of regular attention. Having a recipe I’m excited about makes it feel a little easier. And having leftovers means tomorrow’s version of me has one less thing to figure out.

Creamy Pumpkin Soup

Makes: about 4 servings

Time: about 30 minutes

Ingredients

● 1 tablespoon olive oil

● 1 small yellow onion, diced

● 2 garlic cloves, minced

● 1/2 teaspoon dried thyme

● 1/2 teaspoon smoked paprika

● 2 cans pure pumpkin purée, 15 ounces each (not pumpkin pie filling)

● 2 1/2 cups low-sodium vegetable broth, plus more to thin as needed

● 3/4 cup plain Greek yogurt, brought closer to room temperature

● Salt and black pepper, to taste

● Optional: pumpkin seeds, a little extra yogurt, or a drizzle of olive oil for serving

● Bread or toast, for serving

Directions

1. Heat the olive oil in a large pot over medium heat. Add the onion and cook for 6–8 minutes, stirring occasionally, until softened.

2. Add the garlic, thyme, and smoked paprika. Stir for about 30 seconds.

3. Stir in the pumpkin and broth until combined. Bring to a gentle simmer and cook for 10–15 minutes, stirring occasionally.

4. If you’d like a smoother soup, remove it from the heat and carefully blend with an immersion blender.

5. Take the pot off the heat and let it stop bubbling. Put the yogurt in a bowl and gradually whisk in a few spoonfuls of warm soup. Stir that mixture back into the pot. Avoid boiling after adding the yogurt to help keep it smooth.

6. Add more broth if you prefer a thinner soup. Taste, season with salt and pepper, and serve with toppings and bread.
